How Sue and John got into producing Morecambe Bay Shrimps and why they chose this particular product
Sue and John Baxter took over James Baxter & Son in 2008, continuing the legacy of their father Robert ‘Bob’ Baxter, who had been in charge for over 40 years. They have been producing Morecambe Bay potted shrimp since 1799, and take great pride in making this wonderful product to the same traditional recipe every generation of Baxter has. The beauty of potted shrimp is in their simplicity and so Sue and John know that by using the best possible raw ingredients, and sticking to their secret family recipe, they are able to maintain the high standards their family have always kept. The Queen Mother granted James Baxter & Son a Royal Warrant in 1962, and five years later the Queen did so herself. Over 50 years later the company still provides the Royal household with potted shrimp, and so James Baxter & Son truly are ‘fit for a queen’.

They key with potted shrimps is to not overcomplicate things. A good way to eat them is to warm them up quickly in a pan for about 30 seconds and spread them on a hot crumpet or brown bread with a queeze of lemon. Delicious!
