How Trevor got into producing Jersey Black Butter and why he chose this particular product:

Trevor took over La Mare Wine Estate after its founder, Richard Blayney, retired in 1997. The estate is an incredible combination of history and tradition, with beautiful gardens, historic buildings and extensive vineyards and orchards. For Trevor Jersey Black Butter is not only only important in gastronomic terms, but is representative of the now declining, traditional rural culture of the Island. Trevor and his team are dedicated to preserving Jersey’s rich culinary heritage and the culture that surrounds this, and want to use the resources on the estate to produce an array of products which celebrate the best of Jersey.
