The challenges that Tom is facing producing Three Counties Perry
Tom’s greatest challenge is the lack of raw material. To deal with this Tom helps run an extensive campaign to encourage planting of new Perry pear orchards on new rootstocks and traditional ones, this involves proving that there can be economic return from growing Perry pears. Only by improving the growing system of Perry pears in the Three Counties can Tom produce Perry of the highest quality which will gain a superior price with consumers and re-sellers. In Tom’s words Perry making “is part science, part leap of faith”. He works with natural raw materials which vary in everything from size and sugar content to nutrients, meaning that the final product often varies in flavour and appearance. All these factors make the Three Counties Perry unique but convincing consumers, who are used to standardised taste and appearance, remains a challenge.
