How Carwyn got into producing Caerphilly cheese why he chose this particular product:
Carwyn’s parents, Gwynfor and Thelma, started producing cheese commercially in 1987 in response to the difficult conditions in the agricultural industry as dairy farmers were forced to cope with the introduction of Milk Quotas – making cheese from the milk produced by their herd was a way of ensuring that they would not go above their allocated quota of milk. Carwyn now is in charge of operations at Caws Cenarth and draws on the skill and experience seven generations of cheese-makers before him. Caws Cenarth has always been famous for producing creamy, fresh-flavoured Caerphilly and Carwyn maintains that tradition today. The Caerphilly he produces today is still made using the recipe his great grandmothers used to use. Carwyn is proud to continue the legacy of his family, promoting artisan Welsh cheese-making while still indulging his passion of creating new and exciting cheeses.
