How Joe got into producing Stichelton and why he chose this particular product:
Stichelton Dairy is a result of a partnership between Joe Schneider and Randolph Hodgson of Neal’s Yard Dairy back in 2004. Randolph teamed up with Joe  in order to rediscover the traditional methods of British artisinal blue cheese making. Their aim was, and still is, to put traditionally made farmhouse Stichelton back on Britain’s culinary map. Having found the perfect farm,with the quality of milk they needed, they started producing Stichelton using the raw milk from the parlour located right next the dairy.

The challenges that Joe is facing producing Stichelton:
Using only raw milk from one farm means that the milk varies from season to season. The milk  that Joe is using to make Stichelton “is a living thing as opposed to dead pasteurised milk”. The milk is not standardised and therefore tends to have a mind of its own.

Joe makes Stichelton, plain and simple. It is sold in stores across the UK.

Joe’s favourite Stichelton recipe:
Having tasted it in a restaurant in Bra, Italy, Joe reckons the best dish he has ever tasted using his cheese was gnocchi a la Stichelton, a light creamy sauce made with Stichelton poured over a plate of gnocchi.
