
Founded in 2009 by chef and farmer Jorge Thomas, Swaledale Butchers champions native breeds, whole-carcass butchery and exceptional British meat. What began by supplying some of the country’s leading restaurants has grown into a business serving both professional chefs and home cooks across the UK, united by a shared appreciation for flavour, provenance and food with a strong sense of place.
Working with a network of farmers, many within the Yorkshire Dales National Park, Swaledale supports traditional livestock farming and the native breeds that have shaped Britain’s landscapes for generations. Long before regenerative farming became a widely used term, many of our farmers were already focused on healthy soils, biodiversity and livestock reared in harmony with their environment.
Through careful sourcing, skilled butchery and a commitment to nose-to-tail eating, we aim to celebrate the remarkable quality of British farming whilst helping create a sustainable future for native breeds.
