Newly formed artisan producers of traditional smoked foods supporting local Somerset suppliers of traditionally reared meats and vegetables, as well as wild game and line caught fish. Smoked garlic oil and smoked coarse sea salt are also usually available, but these are sourced from outside of Somerset.
Onus is working with the community in the Somerset Levels, and includes sourcing local wood for smoking and cooking foods, using local ciders in brines, and selling within a 30 mile radius. A bespoke smoking service is offered to those who wish to have their own produce cured and smoked.
