For many hundreds of years, mutton was the main form of sheep meat of choice eaten in the United Kingdom. Yet over the past 40 years, it has virtually disappeared from our shops and menus and we are in real danger of losing one of our iconic foods, as much part of our culture and heritage as roast beef. Reestit mutton is one of a numerous number of forgotten foods that Slow Food is trying to preserve through the Ark of Taste programme, listing more than 79 foods in the UK. Bob Kennard, leading figure in the development of the organic sector in the UK, has always been involved to in the protection of the local food biodiversity, the expert knowledge and the ancestral UK culinary traditions. His new book Much Ado about Mutton, (Merlin Unwin Books ISBN: 9781906122614, priced £20) telling the hitherto untold story of mutton, with the aim of getting people back eating quality mutton and popularising rare mutton breeds. It includes the history, social and cultural impact and the farming of mutton, a suppliers directory of where to buy mutton, as well as number of authentic mutton recipes.
