Once again, Slow Food is working with British Charcuterie Live, to set the criteria for Best Traditional or Heritage Breed product.

Charcuterie is having a huge renaissance in the UK, and using traditional techniques and native breeds are at the heart of this growing artisan craft.

If you are Charcuterie producer, then the letter from the doyenne of artisan food, Henrietta Green, who founded the awards is for you.
