Sam is chef and co owner of Birch in Bristol. Birch is a small, neighbourhood restaurant in the south of the city which serves a short and daily changing menu of regional food, constructed with excellent local produce. Birch has a half acre field on the outskirts of the city where they grown much of their own fruits and vegetables. The menu frequently features Ark of Taste products. All meat is rare breed and slow grown, and all bought direct from farms in the region as whole or half animals.
