As a freelance chef and caterer for private clients in and around Bray, as well as teaching budding young chefs on a private island in the Caribbean, his culinary background is diverse, “from working at a 3 star Michelin restaurants in France to owning a successful restaurant business in Canada, to teaching and catering in the Caribbean”.

He has also published 5 books on food- most recently being “A boy after the sea” a tribute to the loss of his 19 year old son. It was awarded best in the world for “Fish and seafood” at the Gourmand awards in Paris – It includes 26 chefs from around the world who are at the forefront of their profession.  All the proceeds go directly to the charity. – the focus of the book is sustainable seafood.
