With over 20 years’ experience in the industry, Colin has worked in France, Indonesia, Australia, UK and the Caribbean. He returned to Scotland in 2012 bringing his flair and creativity to his homeland.
He started Kilted Lobster in 2014 having identified a gap in the market for fresh Scottish sea food that would be accessible for everyone in terms of price. The team has also just opening their second restaurant ‘Rib Aye’ – a restaurant focused on showcasing the best of Scottish meats.
Colin is passionate about sharing his experience with people & is driven to help give back to the communities he’s been part of. He’s always been involved with projects and part of the joy for him in opening his own restaurants is that he can devote more time to these programmes.
Amongst many other projects, every Tuesday they close the restaurant to the public so the chefs can create bespoke menus to promote their social enterprise values. They take referrals from Edinburgh City Mission, Basic Bank, Children 1st and Appetite for Change offering complimentary dining experiences for families and individuals facing food poverty and isolation issues. All profits from the restaurant are gifted to Cooking Up a Storm to help people in the community.
