For the Love of Fish
Executive Sous Chef at the Headland Hotel in Newquay and the chair of Slow Food Cornwall, Sanjay Prosenjit Kumar, works tirelessly on “Bringing Cornish Sardines Back into Fashion”. This so-named episode of the BBC Countryfile programme aired on 13 May 2012 and was a follow up on Chef Sanjay’s participation in Slow Fish in Genoa in 2011, as a part of the Ark of Taste. The Countryfile programme featured the Chef cooking fresh sardines (Masala Devilled Sardines with rhubarb and tomato chutney) at Newlyn Harbour and fishing (and catching!) Cornish Whitebaits.
Chef Sanjay endeavours to establish a social enterprise in Cornwall called the “School of Cornish Sardines”, which will aim to ‘educate, inspire and entertain cooks of all ages, to enjoy cooking — one step at a time.’
The Open University has also drawn attention to the cause. Chef Sanjay participated in this podcast and is heralded in this Open University article on the fishing crisis.
