Simon Haigh

Simon Haigh joined Mallory Court Hotel as Head Chef in December 2001, was made Executive Chef at Mallory Court in 2006 and was recently appointed Food and Beverage Director of the Eden Hotel Collection.

Prior to his appointment at Mallory Court, Simon spent seven years at Inverlochy Castle in Scotland, where he gained a Michelin star, followed by Seaham Hall in Northumberland.

Among their many accolades and awards, Simon and his team first attained a Michelin star at Mallory Court in 2003 which they have successfully retained since then.

Simon said of his team’s achievements:

‘We as the kitchen at Mallory are extremely happy to have achieved the star; after all it’s a benchmark that most chefs hope to attain. It is not down to any one person but the whole kitchen team from myself through to the people who do our washing up, they are all part of a chain and each one is a vital link’.

Simon’s other achievements include an Acorn ’30 under 30’, Egon Ronay ‘Best Dessert in Scotland’, holding a Michelin star and 3 Rosettes at Inverlochy Castle and gaining 3 Rosettes at Seaham Hall.

Simon now resides in Leamington Spa with his family, Joshua, Zack and his wife Joanna.
