Paul Wedgwood
Paul focuses on using Scottish ingredients which are as local as possible but he is not prepared to compromise on quality. Becoming well known for using foraged leaves, herbs, fruits and mushrooms and Paul has a forager who keeps him supplied with many unusual ingredients.
Paul Wedgwood started his career in the Lake District working in a variety of establishments from pubs and Country house hotels to award winning fine dining restaurants. Paul was particularly inspired by working under celebrity chef John Tovey at Miller Howe in Windermere. A passionate and ambitious chef, Paul’s long term goal was always open a fine dining restaurant in which he would combine his experiences to be able to offer fine dining in informal surroundings with excellent service.
In 1999 Paul opened the Georgian House Restaurant and bar in Kendal which was hugely successful despite being located in a working class market town. Six years later on a visit with Lisa to his parents in Edinburgh the couple’s dreams started to become realised when they found the venue for Wedgwood the Restaurant.
Wedgwood the Restaurant has quickly become a key player in the Edinburgh restaurant scene and Paul with his vivacious and enthusiastic character is often called upon to perform cooking demonstrations throughout the UK. Paul is now a regular favourite at the Taste of Edinburgh Festival and The Royal Highland Show amongst others.

However, Paul can often be found foraging on the river bank or in the woods in search of the best ingredients.
Recently Paul and Wedgwood the Restaurant have received a string of awards; in May 2009 Paul was awarded a Silver medal at the Scottish Chef Awards in the City Chef of the Year category. These are particularly prestigious awards since chefs are nominated by their peers.
In January 2010 Wedgwood the Restaurant earned a place in The Michelin Guide.
Also in January 2010 Wedgwood the Restaurant was named Best New Restaurant in the UK by Harden’s Restaurant guide. This is another outstanding achievement since there are only three categories in Hardens awards and it runs throughout the whole of the UK.
