Finlay is passionate about using the best local and seasonal produce. At the Edinburgh Larder Bistro he works closely with a wide range of Scottish suppliers, ensuring provenance and sustainability are at the core of the business.
Menus at the Edinburgh Larder Bistro are changed with the seasons to utilise ingredients at the best possible time of year. Finlay also works closely with local forager Ben to introduce new and exciting wild flavours and add extra dimensions to dishes.
